I am not sure that encryption is involved in standard connections as such
(apart from authentication). However, you can get http://www.vncscan.com ,
which will enable you to achieve good encryption levels (thus privacy).
There might be encryption options in the standard remote desktop software,
but I have not explored them.

Be aware that while encryption is illegal in some countries, it is a
requirement on certain networks (ports are blocked on desktop connections
that are not secure).
