One major thing is that if you use a "stable" release, it won't change
on you but it will get security updates.

Ubuntu has a faster release cycle, which individual users might prefer.
It is more likely that their hardware is supported without having to
download and compile drivers.  It has the latest eye-candy.

But the rapid updates mean less testing and more rapid change.  If you
are in charge of supporting a large deployment, it might be better to go
with something that updates at a more measured pace and that gets a lot
more testing before release.  Doubly so if you are running it on servers.

It all depends on what you're looking for.
