Actually, yes I have.  When they needed a .NET interface to Websphere.
As I said elsewhere in my posting, reccomendations depend on the needs
of the project, the skills of the team, and the existing.

In some cases, the client has already decided to use Windows, but wants
additional support and integration.  Most of the needed applications
were available for UNIX or Windows at the time, and Linux wasn't an
option for the client at that time.  Later, several of the components
were migrated to AIX, others were migrated to Solaris, others were
Migrated to Linux when Windows failed to perform reliably.

As for workstations, even when I'm reccomending Linux capabilities for
developer workstations, we don't tell them to scuttle Windows.  We have
corporate clients who do run "pure Linux" client PCs, but this was a
choice made before we were even engaged.  We have lots of engagements
where key IT staff have "dual-mode" capabilities as well.  It's amazing
how easy it is to support 3-4 desktop users with 1 2nd rate PC "server"
and VNC.
